Legend has it that during the voyage across the ocean, the coffee was exposed to so much rain and sea spray that it completely changed its character upon arrival. Today, it is produced under controlled conditions on the Indian Malabar Coast.

After harvesting and drying, the coffee is placed in large, open warehouses along the Malabar Coast in southern India. When the monsoon rains arrive, the coffee is influenced by the rain and sea air before it is sun-dried, with the coffee being constantly turned as it dries. This process is repeated several times before it is packaged.
