Monsooned Malabar coffee from Solberg & Hansen is an intense and distinctive coffee with flavors of cocoa, salty sea air, and sweet tobacco.
Monsooning is one of the coffee world's most unique processing methods, resulting in a very special taste.
Monsooned Malabar is harvested from February to May. Due to the special processing method, the coffee cherries must be large and fully ripe. The cherries are then sun-dried with the pulp completely intact. The batches suitable for monsooning are selected during harvesting. Monsooning is the name of the process where the dried coffee beans are exposed to the Asian southwest monsoon. The coffee is spread across the floor in large warehouses with open walls while the monsoon sweeps over the coast. After eight days, the beans are stacked in sacks and exposed to the monsoon wind until they crack. The beans are then laid out on the floor again before the process is repeated approximately every ten days throughout the monsoon season.
During monsooning, the beans absorb a lot of moisture, causing them to swell. The color of the beans changes from green to golden yellow, and they become significantly larger. The combination of salty sea air, monsoon rain, and wind transforms the coffee completely – both in appearance and taste.
