Legend has it that during its voyage across the sea, the coffee was exposed to so much rain and sea air that it completely changed character upon arrival. Today, it is produced under controlled conditions on the Malabar Coast of India.
After harvesting and drying, the coffee is placed in large, open warehouses along the Malabar Coast in southern India. When the monsoon rains arrive, the coffee is affected by the rain and sea air, before being dried by the sun, with the coffee being turned constantly while it dries. This process is repeated several times before it is packed.
